Pumkin Pie Cake Balls :)




So I got this amazing cookbook called 101 Gourmet cake bites For all Occasions by Wendy Paul. I was so excited to try the recipes in this book Come to find out all her recipes call for a box cake mix. Which is awesome for most people and for me most of the time. But at midnight who really wants to get dressed and go buy that cake mix to make these when you get the urge to cook. Not me so I change it up a bit.
Just a little note I love to cook at midnight because that means the kids are in bed and I can have the kitchen to myself:)

Ingredients
2 cups flour
1 1/2 teaspoons baking Power
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
1 teaspoon pumpkin pie spice
1/2 cup sugar
1 cup pumpkin puree
3 eggs
1/2 cup whole milk
1 tablespoon butter (softened)

Mix the dry ingredients first and then mix in all the rest. The Batter is thick so don't worry. Bake in a 9 X 13 pan at 350 degrees for 25-28 minutes. Cool on cool rack until completely cool. Then brake the cake into small pieces into a large bowl.
Then add to the bowl.
1/4 cup pumpkin puree
3/4 cup Pumpkin Vanilla Butter Cream Frosting
Beat 1/2 cup butter (softened) for 30 seconds. Add 3 1/4 cups sifted powdered sugar, 3 tablespoons whole milk, 2 teaspoons vanilla, and 1 tablespoon pumpkin pie spice (can use cinnamon instead)
Use a fork and mix the crumbled cake, pumpkin puree, and frosting well.
Shape into bit sizes balls and place in refrigerator for 2 hours. Dip in melted Chocolate.
